Spicy Herring

Servings:

Ingredients

  • approximately 300 g herring fillets à la matjas in oil*
  • 1 cup water
  • 6 peppercorns
  • 1/2 small onion
  • 1 small chili pepper
  • 2 cm fresh ginger
  • 1 clove garlic
  • 1/3 cup rice vinegar (or regular vinegar)
  • 1 teaspoon sugar
  • 1 tablespoon oil

Preparation

  1. Prepare the marinade: bring water to boil with peppercorns.
  2. Remove from heat and immediately add thinly sliced onion, chili pepper sliced into thin strips (without seeds), peeled and sliced ginger, and peeled and sliced garlic.
  3. Add rice vinegar, sugar, and oil, stir, and then let cool completely.
  4. Remove herring from packaging and cut into small pieces.
  5. Layer the herring with the cold marinade in a jar or glass container. Close and refrigerate for approximately 1 day. Store in the refrigerator for up to 1 week.

Tips

* herring fillets from a tray, already rinsed, in vegetable oil
If using herring "from a barrel" that is salted, you must rinse them first, as described in the country-style herring recipe.
