Mexican Beef, Tomato and Green Bean Soup

Servings:

Ingredients

  • 400 g beef with bone (e.g. tenderloin) or 250 g boneless meat
  • 1 onion
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1/2 cup white wine
  • 3 cups broth or water
  • 1 and 1/2 cans diced tomatoes
  • 2 teaspoons tomato concentrate
  • 100 g frozen green beans

Spices:

  • 1/2 teaspoon dried oregano, salt, pepper, 1/3 teaspoon hot paprika, 1/2 teaspoon caraway

For serving:

  • sliced tortillas, shredded yellow cheese, fresh cilantro

Preparation

  1. In a pot with oil, soften the onion chopped into cubes and finely chopped garlic. Add meat cut into small pieces, the bone trimmed from the meat, spices and fry, stirring occasionally for about 5 minutes.
  2. Pour in wine and simmer for 1-2 minutes, then pour in hot broth and tomatoes and bring together to a boil. Cover, reduce heat and simmer for about 1.5 - 2 hours until meat is tender.
  3. Add tomato concentrate and frozen green beans, simmer for 5 minutes. Serve with shredded cheese and crispy tortilla chips.
