Herring Tartare
Ingredients
- 2 herring fillets (for example, in oil or marinated in vinegar or rinsed from salt)
- 2 teaspoons chopped parsley
- freshly ground black pepper
- 1 teaspoon mustard
- 1 teaspoon lemon juice
- a pinch of brown sugar
- 2 tablespoons marinated hot peppers, for example jalapeño or peperoni
- 3 tablespoons marinated mushrooms + 1 tablespoon marinated onion
- 1 tablespoon chopped chives
- linseed oil
Preparation
- Fillets marinated in vinegar should be thoroughly dried with a paper towel, fillets in oil should simply be drained and removed onto a cutting board. Taste each herring and assess whether it is not too salty.
- Finely chop the herring together with parsley, add freshly ground pepper, mustard, lemon juice, and sugar, and mix everything together while chopping.
- Also chop marinated jalapeño peppers, marinated mushrooms and onion, chives, and mix everything with the herring.
- Spread small bowls with linseed oil, fill with tartare, and arrange on small plates. Garnish with a parsley leaf or chopped chives, and possibly a marinated mushroom.
