Fava bean and spinach soup
Ingredients
- 1 teaspoon olive oil + 1 teaspoon butter
- 1 tablespoon chopped onion
- 1/2 clove garlic, chopped
- 2 cups broth
- sea salt and freshly ground black pepper
- 2 cups cooked and peeled fava beans
- 150 g spinach, rinsed
- 3 thin slices of packaged Parmesan ham or 50 g of another favorite ham
- 2 tablespoons cold-pressed olive oil
- a handful of basil leaves
Preparation
- Pour olive oil into a heavy-bottomed pot, add butter, onion and garlic. Stew over low heat for about 3-4 minutes without browning. Pour in broth, season with sea salt and freshly ground pepper, bring to a boil.
- Add the fava beans and after returning to a boil, add spinach. Cook for 15 seconds, then remove from heat and blend together with ham, cold-pressed olive oil and basil.
- Season the soup if needed and heat before serving. Serve, for example, with chopped chives, freshly ground pepper and garlic croutons.

Tips
For a vegetarian version of the soup, you can omit the ham.
