Yeast Rolls with Apples and Crumb Topping
Ingredients
Dough
- 500 g wheat flour
- 250 ml warm milk
- 50 g fresh yeast
- 100 g sugar
- 2 eggs + 1 egg for brushing
- 100 g butter (melted)
Filling
- 1 kg roasted apples (ready-made or homemade - RECIPE)
Crumb Topping
- 120 g flour
- 90 g cold butter
- 50 g powdered sugar
Glaze
- juice from 1/3 lemon
- about 2/3 cup powdered sugar
Preparation
- Remove yeast and eggs from refrigerator earlier and warm well to room temperature. Sift flour into a large bowl.
- Warm milk (should be warm), add warmed yeast and mix, then add 1 tablespoon flour and 1 tablespoon sugar and mix again. Set aside on the flour in the bowl for about 10-15 minutes.
- Whisk eggs with remaining sugar into a fluffy mass. Gently combine flour with risen, foamy yeast mixture and with whisked eggs. Then begin kneading dough.
- Knead patiently for about 15 minutes, then add melted and cooled butter and knead for another about 5 minutes until ingredients are fully combined.
- Cover with plastic and set aside for about 1 and 1/2 hours to rise.
Tips
Yeast rolls can be stored at room temperature covered for 2-3 days. Can also be refrigerated and frozen for longer. It's always good to gently warm the rolls before serving.
