Whole grain fritters

Ingredients

  • 1 and 3/4 cups water or milk (at room temperature)
  • 2 teaspoons honey
  • 1 tablespoon vegetable oil or olive oil
  • 1 and 1/3 cups wheat flour
  • 1 and 1/3 cups whole wheat flour
  • 1/2 teaspoon sea salt
  • 2 teaspoons instant dry yeast

and:

  • 1/4 teaspoon baking soda + 3 tablespoons warm water
  • oil for frying (such as peanut oil, sunflower oil)
  • maple syrup for serving (powdered sugar or other favorite topping)

Preparation

  1. Mix milk or water with honey, add oil. In another bowl sift both flours, add all the bran that remained on the sieve. Add salt, yeast and mix.
  2. Pour milk with honey into flour and gently mix ingredients with a spoon. Cover with plastic wrap and immediately refrigerate for one night or up to 4 days. Dough will rise during this time.
  3. Remove dough from refrigerator. Mix baking soda with warm water and gently combine with dough. Set aside for approximately 10-15 minutes or longer if possible (dough will start to rise again).
  4. Heat skillet, pour oil to a height of approximately 1-1.5 cm. When oil is hot, reduce heat to medium and fry fritters by scooping dough with a spoon dipped in oil.
  5. While frying be careful so oil constantly sizzles but does not burn. Fritters should have a lightly browned crust and inside a fluffy and risen crumb. Serve with maple syrup or sprinkled with powdered sugar, or with another favorite topping.
