Vegetable Soup with Homemade Broth Cube
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/3 cup red lentils
- 1 tablespoon millet
- 3 smaller potatoes
- 1.25 liters water
- 1 cup frozen green beans
- 2 tablespoons homemade broth cube (or approximately 4 frozen cubes)
- handful of kale or spinach
- 2 tablespoons chopped chives
Preparation
- Pour oil into a pot, add butter, dry lentils and millet and peeled and diced potatoes. Heat for about 3 minutes stirring with a wooden spoon.
- Pour in water (preferably hot) and bring to a boil. Add a pinch of salt, cover and cook covered for about 10 minutes.
- Add frozen green beans previously rinsed with warm water and bring to a boil. Add homemade broth cube, mix and bring to a boil. Cook covered for about 5 minutes. Add kale and cook for one minute.
- At the end add chopped chives and season if needed. Serve for example with diced and pan-fried bacon.

150 g bacon, diced and browned in a pan
Tips
The soup can be cooked in meat broth, that is set 2 and 1/2 liters of water with meat such as 2 chicken thighs, salt and pepper cook for about an hour. Then continue adding lentils, potatoes etc... as in the recipe.
