Tomato soup with basil and cheese croutons

Tomato soup with basil and cheese croutons

Servings:

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic
  • 3 shallots or 1/2 onion
  • 1/2 chili pepper
  • 1/3 cup white wine (optional)
  • 700 g tomato purée (passata)
  • 700 ml chicken or vegetable broth
  • 1/2 teaspoon dried oregano
  • 1 teaspoon Worcestershire sauce (optional)
  • a bunch of fresh basil
  • 1 tablespoon butter
  • 80 ml 30% sour cream

Cheese croutons

  • baguette or ciabatta or roll
  • butter
  • 200 g grated mozzarella
  • 1 teaspoon dried oregano

Preparation

  1. Pour olive oil into a pot, add peeled and halved garlic cloves. Sauté for a moment, then add peeled and diced shallots or regular onion. Add chili pepper sliced and seeded and sauté on low heat for about 5 minutes, stirring occasionally.
  2. Pour in white wine and simmer for half a minute. Add tomato purée and broth, bring to a boil. Meanwhile season with pepper and add salt if needed. Simmer uncovered for about 10 minutes.
  3. Add dried oregano, Worcestershire sauce and leaves from half of the basil bunch. Blend with an immersion blender "giraffe" but not necessarily into a smooth cream. Simmer for about 5 more minutes uncovered, stirring occasionally.
  4. Remove from heat, add butter and let it melt. Pour in sour cream and mix. Serve with cheese croutons and remaining basil.
