Salad with Squid and Cherry Tomatoes
Ingredients
- 4 small squid, cleaned (or about 150 g squid)
- 1 clove garlic, finely chopped
- 2 handfuls of mixed salad or arugula
- 7 cherry tomatoes, halved
- 1 small shallot, sliced
- 1/2 teaspoon grated lemon zest
Dressing
- 1 teaspoon chili powder
- 1 tablespoon finely chopped parsley
- salt and freshly ground black pepper
- 3 tablespoons olive oil
Preparation
- Mix the dressing ingredients in a salad bowl. Rinse the squid, dry and cut into thin rings. Mix with garlic and half of the dressing. Set aside in the refrigerator for 1/2 hour.
- Tear the salad and transfer to a salad bowl, add salted tomatoes and onion.
- Heat a pan and fry the squid with the marinade until golden, for about 2 minutes. Transfer to a bowl with salad. Sprinkle with lemon zest and drizzle with the remaining dressing. Serve with lemon and bread.
