Sift flour into a larger bowl together with baking powder and baking soda. Add sugar, yolks, buttermilk and vanilla. Mix all ingredients, then add whites beaten into stiff peaks, ricotta cheese and mix everything well with a spoon.
On low heat heat skillet lightly greased with fat. Place 2 tablespoons dough and fry pancakes over low heat for 3-4 minutes on each side, until nicely browned and risen.
Serve sprinkled with cinnamon and drizzled with berry syrup.
Place berries in a saucepan, pour 1 tablespoon water and heating gently over low heat, stirring for approximately 1-2 minutes until juice releases. Add maple syrup and sugar to taste. Stirring heat for approximately 3 minutes more until syrup thickens.
