Ricotta pancakes with bananas
Ingredients
- 1 and 1/3 cups wheat flour
- 3 tablespoons sugar
- 2 teaspoons baking powder
- pinch of salt
- 250 g ricotta cheese*
- 2 eggs
- 2 tablespoons melted butter or oil
- approximately 1/4 cup milk
- 2 bananas
Preparation
- In a larger bowl mix sifted flour with sugar, baking powder and salt. In another bowl mix ricotta cheese with eggs, melted butter or oil and milk. Combine ingredients from both bowls into thick uniform mixture.
- Heat skillet (such as crepe skillet or another with non-stick coating), place 1 full spoon dough per pancake, level surface and fry over medium heat until they rise and are nicely browned for approximately 2.5 minutes. When pancakes rise somewhat (roughly halfway through frying) press 2 banana slices into the dough.
- Flip to the other side and fry to browning, as before or a bit shorter.

* available in every supermarket, can also try smooth sweetened or unsweetened cheese such as homogenized or ground curd cheese as for cheesecake. Can also use Greek yogurt.
