Peach pancakes
Ingredients
- 250 g plain yogurt or kefir
- 2 eggs
- 2 tablespoons sugar or vanilla sugar
- 170 g wheat flour
- 2 teaspoons baking powder
- 1 tablespoon vegetable oil or melted butter
- 2-3 peaches
Preparation
- Pour yogurt or kefir into a bowl. Add eggs and sugar and mix with a whisk.
- Add flour together with baking powder and mix again with a whisk into a smooth, lump-free batter. At the end, add vegetable oil or melted butter.
- Cut peaches into quarters and remove the pits. Cut the quarters into thin slices. The slices can also be cut into 2-3 smaller pieces.
- Heat a skillet (such as a large crêpe pan or another with a nonstick coating) or use a small pan for individual pancakes (as shown in the photo below).
- Spoon about 2 tablespoons of batter per pancake, leaving spaces between them, then gently press peach pieces into the batter.
- Fry on medium heat until the pancakes rise and are nicely browned (about 2.5 minutes). Flip to the other side using a wide spatula and continue frying for about 2 minutes.
- Serve for example with honey or powdered sugar.
