Oatmeal pancakes
Ingredients
- 1 and 1/2 cups flour (any, white or whole grain)
- 1/2 cup instant oatmeal flakes
- 1 heaping teaspoon baking powder
- 1 teaspoon baking soda
- pinch of salt
- 3 tablespoons sugar or maple syrup
- 1 package vanilla sugar
- 2 eggs
- 2 cups Greek yogurt or natural yogurt or buttermilk, kefir
and:
- 2 tablespoons clarified butter or oil for frying*
- maple syrup for serving
Preparation
- Pour flour, flakes, baking powder, baking soda, salt, sugar and vanilla sugar into a large bowl. Mix with a spoon, add eggs, yogurt and mix everything with a spoon.
- Heat non-stick skillet, grease with a piece of butter threaded on a fork, place 1 full spoon of dough per pancake and fry several pancakes simultaneously over moderate heat for approximately 1-2 minutes until dough rises, air bubbles appear on the surface, and the bottom is browned.
- Flip to the other side and fry for approximately 1 minute more. Serve drizzled with maple syrup.
Tips
* can fry without fat on a non-stick skillet, then add fat into the dough itself
