Hummus
Ingredients
- 1 can approx. 400 g chickpeas*
- 1 teaspoon lemon juice
- 1 small clove garlic
- 5 tablespoons tahini sesame paste (store-bought or homemade)
- 1 teaspoon ground cumin (caraway)
- salt and pepper
- 1 tablespoon sesame oil or extra virgin olive oil
Preparation
- Place the drained chickpeas in a food processor, crusher or blender. Add a few tablespoons of the liquid or water from cooking the chickpeas and begin mixing into a paste.
- Meanwhile add the rest of the ingredients: lemon juice, garlic, tahini paste, about 2 pinches of salt, a pinch of pepper, sesame oil or olive oil and cumin (caraway).
- While mixing, gradually add more liquid to achieve the desired paste consistency.
Tips
Serving suggestion
Put the finished hummus in a bowl, drizzle with extra virgin olive oil, sprinkle with freshly ground pepper, hot paprika powder and chopped parsley. You can also add a few green olives and a chili pepper and garlic sautéed in a pan and chopped.

To simplify the preparation
of sesame
tahini paste
, we can pour about 5 tablespoons of sesame seeds onto a dry pan and gently toast them, stirring from time to time (they should only lightly brown). Then grind into a paste by adding about 2 tablespoons of extra virgin olive oil.
