700 g (approximately 7 pieces) salted herring fillets from a barrel
2 cups water
5 peppercorns
3 allspice berries
2 bay leaves
1 onion
1/2 carrot
1/2 cup 10% vinegar
1 teaspoon sugar
1 teaspoon oil
Preparation
Place herring in a bowl and rinse with salt in cold water. Drain the salty water and add fresh water. Let sit for approximately 30 minutes, changing the water 2-3 times during this time.
Check (taste) whether the amount of salt is sufficient and the herring is not still too salty.
Drain the prepared herring, pat dry, and cut into approximately 3 cm pieces.
Prepare the marinade: bring water to boil with peppercorns, allspice, and bay leaf.
Remove from heat and immediately add thinly sliced onion and peeled carrot sliced into thin strips.
Add vinegar, sugar, and oil, stir, and then let cool completely.
Layer the herring with the cold marinade in a jar or glass container with a lid. Close and refrigerate for approximately 1 day.
