Grapefruit, radish and white cheese salad
Ingredients
- mix of salads with spinach or endive or arugula
- pinch of sea salt
- 1 ripe and soft grapefruit
- 5-6 radishes
- 70 g white cheese
Cinnamon dressing:
- 1 teaspoon grated grapefruit zest
- 1 tablespoon grapefruit juice
- 2 tablespoons extra virgin olive oil
- 1/2 tablespoon lemon juice (optional)
- 2 full teaspoons liquid honey
- 1/2 teaspoon ground cinnamon
Preparation
- Rinse the salad, dry it and place in bowls. Grate the grapefruit zest (1 teaspoon) and set aside. Peel the grapefruit and then divide into segments directly over a plate. Remove the segments from the white membranes. You can also fillet the whole grapefruit, meaning cut the segments with a sharp knife between the membranes. Collect the grapefruit juice from the plate, pour it into a small bowl and keep it.
- Sprinkle the salad or spinach with sea salt, place grapefruit segments on top. Sprinkle with grated radishes, arrange white cheese pieces around (the cheese can be sprinkled with sea salt).
- To the bowl with grapefruit juice add the remaining dressing ingredients: grapefruit zest, olive oil, lemon juice, honey, cinnamon. Pour over the salad and serve. Bon appétit!
Tips
You can also use watermelon instead of grapefruit in the salad. Instead of white cheese you can use ricotta.
