2 tablespoons powdered sugar + extra for sprinkling
4 heaping tablespoons flour
1/2 teaspoon cinnamon
optionally maple syrup
Preparation
Place curd cheese in a bowl, add egg yolks (save the whites) and vanilla sugar, then mash with a potato masher.
Peel the apple and grate it on a coarse grater, add to the cheese and mix. Then add the flour and mix thoroughly again.
Beat the egg whites to stiff peaks with the addition of powdered sugar. Add to the cheese mixture and gently combine ingredients with a spoon.
Spoon portions of batter (about 2 tablespoons each) onto a heated skillet (such as a nonstick or crêpe pan) and spread to form evenly-shaped pancakes. You can fry on a dry skillet or with a bit of oil.
Reduce heat and fry for about 2-3 minutes or until the bottom is lightly golden. Flip to the other side and continue frying for about 2 minutes. Sprinkle with powdered sugar and cinnamon, optionally drizzle with maple syrup.
