Crêpes with Drinkable Skyr
Ingredients
- 200 g skyr drinkable yogurt Icelandic type, vanilla
- 250 ml milk (1 cup)
- 160 g wheat flour (1 cup)
- 1 egg
- 2 tablespoons vegetable oil
Preparation
- Pour skyr - drinkable yogurt into a bowl, add milk and mix with a whisk or blend.
- Add flour and combine again (with a whisk or mixer).
- Add the egg and then vegetable oil, each time combining the ingredients into a smooth batter.
- Heat the crêpe pan and fry 5 crêpes: pour the batter with a soup spoon, rotating the pan and spreading the batter over the entire surface. Fry until golden, then flip the crêpe to the other side (only when it is well fried, set and golden) and repeat frying.

Serving suggestion
Example curd cheese filling:
250 g curd cheese e.g. lean
150 g skyr - Icelandic-type yogurt
1 teaspoon honey
1 teaspoon vanilla extract (optionally)
Mix or mash the curd cheese with skyr, honey and vanilla (if using). Spread the crêpes, roll up, warm (on a pan or in a microwave). Serve e.g. with powdered sugar, raspberry jam, fresh or thawed raspberries.
