Crepes with caramelized pear and vanilla sauce

Ingredients

  • 1 vanilla bean
  • 150 ml heavy cream
  • 75 g brown sugar (about 7 tablespoons)
  • 3 pears
  • 30 g butter (about 2 full tablespoons)
  • 4 crepes, for example from this recipe with the addition of 2 tablespoons sugar

Preparation

  1. Cut the vanilla bean lengthwise and scrape out the seeds with a teaspoon.
  2. Bring the cream to a boil along with the vanilla bean, scraped seeds and half the amount of sugar. Remove from heat as soon as it starts to boil. Let it rest for 1 hour to absorb the vanilla flavor (I didn't wait the prescribed hour, but heated the cream for 8 minutes to thicken it slightly. The chilled cream will be thicker than the heated one).
  3. Peel the pears and cut into pieces. Fry in a pan or small pot with butter and the remaining brown sugar.
  4. Arrange the hot pears on the hot crepes, fold the sides of the crepe and pour with vanilla cream.
