Cod and Cauliflower Soup
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 onion
- 1 clove garlic
- 2 liters broth (or water with ecocube)
- 1/3 cauliflower
- 1 can tomatoes*
- about 200 g cod fillets
- spices**: 1/2 teaspoon garam masala or a pinch each of hot paprika and cumin and 1/2 teaspoon each of sweet paprika, turmeric and oregano
- optionally: 1 teaspoon Worcestershire sauce and fresh basil
Preparation
- In a pot with oil, braise diced onion and peeled whole garlic clove. Add butter and broth to the glazed onion and bring to a boil.
- Add diced cauliflower and cook for about 5 minutes. Add blended peeled tomatoes from the can and spices, season with salt and pepper. Cook for about 5 minutes.
- Add diced cod and cook over lower heat for about 3 minutes. Optionally you can add chopped basil leaves and Worcestershire sauce.
Tips
* In summer season instead of canned tomatoes you can use two fresh tomatoes, without skin and seeds.
** If we like more pronounced flavors, we can increase the amount of spices a bit. It's also worth seasoning the soup with Worcestershire sauce.
