Cauliflower Pancakes
Ingredients
- 300 g cauliflower
- 1/2 carrot
- 1/4 onion
- 3 tablespoons wheat flour or spelt flour
- 2 teaspoons potato starch
- 1 egg
- salt, black ground pepper, white pepper, and nutmeg
- for frying: clarified butter or coconut oil
Preparation
- Rinse the cauliflower, dry it, and grate it on a coarse grater. Peel the carrot and grate it on a coarse grater as well, mix with the cauliflower. Then combine with the grated onion.
- Add wheat flour, potato starch, egg, salt, pepper, and season with nutmeg and white pepper.
- Heat the fat in a pan, place about 2 tablespoons of the mixture for each pancake, spread it out, and fry for about 4 minutes until golden on the bottom. Carefully flip with a spatula to the other side and repeat frying.
