Brookie
Ingredients
Brownie
- 200 g butter
- 1 tablespoon cocoa powder
- 150 g dark or semisweet chocolate
- 3 eggs
- 250 g superfine sugar
- 135 g flour
- pinch of salt
Cookie Dough
- 80 g all-purpose flour
- 1/3 teaspoon salt
- 1/2 teaspoon baking soda
- 1 tablespoon vanilla sugar
- 50 g butter
- 80 g cane sugar
- 1 small egg
- 50 g dark or semisweet chocolate
Preparation
- Preheat the oven to 160°C. Prepare a small rectangular baking pan, about 21 cm x 28 cm (or a similar surface area), and line it with parchment paper.
- Prepare the brownie batter: cut the butter into cubes, place it in a saucepan, and melt over low heat. Add the cocoa powder and the chocolate broken into small pieces, and melt, stirring constantly. Remove from the heat.
- In a separate bowl, beat the eggs with the sugar (about 1-2 minutes, until the sugar dissolves). Add the melted chocolate and butter to the eggs and mix until smooth. Add the flour and salt and mix into a uniform batter. Pour into the prepared pan and smooth the surface.
- Prepare the cookie dough: put the flour in a bowl, add the salt, baking soda and vanilla sugar, and mix.
- In another bowl, beat the butter with the cane sugar for about 4 minutes. Add the egg and beat for another 2-3 minutes. Add the dry ingredients and mix. Add the chopped chocolate and stir in with a spoon.
- Drop spoonfuls of the cookie dough over the brownie batter, then use a toothpick to swirl the cookie dough slightly into the brownie batter in places.
- Bake for about 35 minutes, until the cake rises slightly and a crust forms on top.
Tips
This cake tastes great warmed up and served with a scoop of sweet cream ice cream.
