1/2 teaspoon cinnamon, 1 star anise, 2 teaspoons vanilla sugar with real vanilla, a pinch of grated orange zest, 5 cloves
Toppings:
a handful of "graphite" basil (Black variety), or regular green
1 small cup plain yogurt
about 150 g cooked pasta
Preparation
Pour the berries into a pot, add 1 cup of water, 3 tablespoons of brown sugar and all the spices. Bring to a boil, cover the pot, and after 10 minutes strain through a sieve. While holding the sieve over the pot with soup, add 1 cup of cold water, rinsing out the remaining cooked berries.
Add balsamic vinegar, mascarpone cheese, and milk to the resulting berry mousse. Mix well and chill thoroughly (after cooling you can place it in the freezer for half an hour).
Pour the cold soup into bowls, add 1-2 tablespoons of yogurt, for example create patterns with it, sprinkle with cooked pasta, basil, and berries.
