Basil Pancakes

Basil Pancakes

Servings:

Ingredients

  • bunch of basil (from one pot)
  • 1 and 1/2 cups milk
  • 2 eggs
  • 110 g (3/4 cup) wheat flour
  • 1 tablespoon oil (I used coconut) or butter
  • pinch of salt

Example filling

  • 2 handfuls of spinach
  • 1 teaspoon butter
  • 100 g goat cheese in a roll
  • salt and pepper
  • chopped chili pepper

Preparation

  1. Basil pancakes: Remove basil leaves from stems, put into a blender goblet. Pour in milk, add 2 eggs, add flour and blend until smooth. Add oil and blend again. Fry pancakes on a crepe pan like traditional pancakes, for about a minute on each side. Place on a plate.
  2. Filling with blanched spinach, warm goat cheese and chili: Rinse spinach, put it in a pot and heat stirring until spinach wilts. Add a teaspoon of butter, season with salt and pepper and fry for a moment longer. Add sliced goat cheese, mix and heat for a moment longer until it melts. Remove from heat, you can add some chopped chili to the spinach filling. Fill warm pancakes with the mixture, sprinkle with fresh chili pepper and decorate with a basil leaf.
