Banana bread
Ingredients
- 4 eggs
- 1 cup sugar
- 200 ml vegetable oil or 200 g butter
- 4 bananas
- 2 and 1/2 cups all-purpose flour
- 2 and 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- pinch of salt
- 1 cup chopped nuts
- 1 cup coconut flakes (can be omitted if you don't like them)
Preparation
- Preheat the oven to 180°C. Crack the eggs into a bowl and mix or beat them. While mixing, gradually add sugar, vegetable oil or melted butter, and finally add mashed or blended bananas.
- In another bowl, mix flour with baking powder, baking soda, and salt. Add the banana mixture and mix.
- Add finely chopped nuts and coconut flakes if using them and combine the ingredients.
- Pour the batter into a large loaf pan lined with parchment paper (about 28 cm long) and bake for about 1 hour or until a toothpick comes out clean.
Tips
Instead of 1 long pan, you can use 2 shorter pans and bake them for about 50-55 minutes.
Instead of nuts and coconut flakes, you can use other additions such as almonds, chopped dried plums.
You can also glaze the bread with chocolate glaze.
