Thai Tom Yam Soup with Chicken
Ingredients
- 1 liter water
- 100 ml coconut milk
- 30 g tom yum paste*
- 200 g canned tomatoes
- 100 g canned Chinese mushrooms (straw mushrooms)
- 1 chicken fillet
- 2 tablespoons fish sauce
- 1 tablespoon lemon juice
and
- chives, cilantro, chili pepper, optionally - Thai basil
Preparation
- Bring water to a boil with coconut milk and tom yum paste. Add tomatoes and drained and halved mushrooms.
- Place diced chicken breast in the simmering broth. Season with fish sauce and lemon juice. Cook for about 10-15 minutes until meat is soft.
- Add chopped chives, cilantro leaves, chopped chili pepper and Thai basil leaves if available.

can be bought ready-made or make your own from the following ingredients:
1 tablespoon oil, 1 shallot, 1 lemongrass, 1/2 teaspoon chili powder, 1 teaspoon tamarind, 1 clove garlic, 3 cm piece of galangal, 1 teaspoon cane sugar

Briefly fry diced shallot onion in oil, pour in 1 liter water or broth, bring to a boil. Meanwhile add halved lemongrass, chili powder, tamarind, halved garlic clove, sliced galangal and sugar.
