Pork broth (meat and vegetable)
Ingredients
- 1 kg raw pork ribs or pork bones
- 2 liters water
- about 1.5 teaspoons salt
- vegetables: carrot, parsnip, piece of celeriac, leek, 2 sprigs of parsley
- 1 onion
- 1 clove garlic
- 2 bay leaves
- 3 allspice berries
- 3 peppercorns
- optional: 3 pieces dried mushrooms
Preparation
- Place the meat cut into several pieces in a pot, cover with cold water and bring to a boil on high heat. Reduce heat and skim (remove the foam from the surface)
- Add salt and cook covered for about 1 hour.
- Add vegetables: peeled carrot, parsnip and celeriac, a piece of rinsed leek, garlic in whole form and parsley. Place the whole unpeeled onion on the burner and singe it (this is not necessary), add to the soup.
- Add bay leaves, allspice, pepper and dried mushrooms if using. Cook for about 30 - 45 minutes until vegetables are soft.
Tips
The meat from the broth can be used to make dumplings, croquettes or meat-filled pierogi.
Just grind the meat together with a piece of carrot and parsnip from the broth, add sautéed onion, season with salt, pepper and add a little breadcrumb if needed. You can also add cooked dried mushrooms from the broth or enrich the filling with sautéed mushrooms.
