250 ml milk (regular or plant-based, e.g. coconut from a carton or almond)

Preparation
Pour the millet flour into a bowl, add salt and baking powder, mix with a whisk.
Add the melted butter or oil, egg yolks and milk. Mix into a smooth batter, then let it rest for at least half an hour covered.
In the meantime, preheat the waffle iron and beat the egg whites into stiff peaks. Add them to the batter and gently mix.
Place a portion of batter on the preheated waffle iron surface and cook the waffles for about 5 minutes depending on the power of the waffle iron (millet waffles cook a bit longer than regular ones).
