Emperor’s Omelette with Strawberries

Emperor’s Omelette with Strawberries

Ingredients

  • 1/2 cup flour
  • 1/2 cup milk
  • 3 eggs
  • 2 tablespoons sugar
  • a small pinch of salt
  • 2 tablespoons butter

For serving

  • powdered sugar
  • strawberries + sugar for strawberry mousse
  • optionally blueberries, homogenized cheese

Preparation

  1. Pour flour into a bowl, add milk and mix with a whisk until smooth. Add the egg yolks (reserve the whites) and sugar and mix again.
  2. Whip the whites separately with a small pinch of salt until stiff peaks form. Add to the yolk mixture and gently fold together with a spoon.
  3. Heat the pan with butter. When the butter starts to sizzle, clarify it (remove the foam). Spread the butter over the entire pan surface, pour in the omelette mixture, smooth the surface.
  4. Fry on low heat for about 5 minutes or until the omelette is nicely browned on the bottom. Then flip it to the other side, but not all at once - flip it piece by piece - the omelette should tear into pieces.
  5. After flipping, after about 2 minutes of frying, cut the larger pieces into smaller parts using e.g. a silicone spatula. Turn the omelette pieces over again and fry them on the other sides (not too long, until the raw dough sets, totaling about 2 minutes).
  6. Transfer to a plate, sprinkle with powdered sugar and strawberry pieces. Blend some strawberries with sugar and use as a strawberry sauce for the omelette. You can also serve with vanilla cheese - homogenized.
