Fluffy Yogurt Pancakes with Berries
Ingredients
- 250 g natural yogurt
- 2 eggs
- 1 packet vanilla sugar
- 170 g flour
- 2 teaspoons baking powder
- 120 g berries (about 1 cup)

- fresh berries / yogurt / maple syrup
Preparation
- Mix yogurt with eggs and vanilla sugar using a whisk, fork, or mixer on low speed. Add flour with baking powder (preferably directly through a sieve) and mix or gently blend only until the ingredients combine into a smooth and uniform mass. Add berries and gently mix with a spoon.
- Heat a skillet (such as a large pancake skillet or another with a non-stick coating), spread about 1 full spoon of batter per pancake keeping spacing between them.
- Fry on not too high heat until they rise and are nicely browned (about 2.5 minutes). You can fry without fat, but I add a small amount of butter to the skillet for flavor and nice browning of the pancakes.
- Flip the pancakes to the other side and fry until browned, for about 2 minutes. Before frying the next batch of pancakes, wipe the skillet with a paper towel or sponge.
Tips
You can add 2-3 tablespoons of melted butter to the batter (at the same time as the eggs), the pancakes will then be more "moist".
The batter can be sweetened with sugar as desired.
