Radish, Gorgonzola and Bacon Sandwiches
Ingredients
- 6 radishes
- 4-6 bacon slices
- 1/3 good baguette
- 4 lettuce leaves
- 70 g gorgonzola cheese (or another with blue mold)
Radish marinade:
- sea salt and freshly ground pepper
- 2 tablespoons rice vinegar (1 tablespoon wine or lemon juice)
- 1 tablespoon extra virgin olive oil
- 1 teaspoon honey
Preparation
- Slice the radishes as thinly as possible, put into a small bowl, season with salt and pepper, add vinegar, oil and honey. Mix and set aside. Put bacon on the pan and fry on both sides until it renders and is crispy. Place on paper towels to drain the fat. Cut out the eyes from the bacon and possibly the skin if it's hard.
- Cut the baguette across into 2 parts, cut each lengthwise into 2 halves. Toast in a toaster or toaster oven, spread gorgonzola cheese on one half, cover with bacon and then radishes removed from the marinade. Add lettuce and place the second half of the baguette on top. If we want to toast the sandwiches in a toaster oven/sandwich maker, we only add gorgonzola and bacon to the baguette, while we add radishes and lettuce to the sandwich after heating.
Tips
If we don't have all the ingredients for the radish marinade, we can simply use fresh sliced radish.
