Whole grain pancakes with plums
Ingredients
- 180 g plain yogurt
- 2 eggs
- 2 tablespoons vegetable oil or butter
- 1 and 1/4 cups whole grain flour (e.g. rye, wheat, spelt)
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 3 tablespoons sugar e.g. cane sugar
- 1 cup prune plums or others
Preparation
- Pour the yogurt into a bowl, add the eggs, melted fat, stir with a whisk or briefly with a mixer into a uniform mass.
- Add the sifted flour, baking powder, cinnamon and sugar, gently mix with a whisk, only until the ingredients combine.
- Heat a non-stick pan. Cut the plums into slices, remove the pits.
- Spoon 1 tablespoon of the mixture onto the pan, place the chopped plums into the mixture and fry over medium heat for about 2 minutes (until the bottom browns).
- Flip with a spatula to the other side and fry for another 2 minutes. Transfer to a plate and repeat with the remaining batter. Serve e.g. drizzled with maple syrup.
