Cheese pancakes with apples, cinnamon and raisins
Ingredients
- 250 g roasted apples (as for apple cake)*
- 1/2 teaspoon cinnamon
- 4 - 5 tablespoons raisins
- 1 tablespoon vanilla sugar
- 200 g creamy curd cheese in cubes or fatty curd cheese in a lump
- 5 tablespoons sugar (or to taste)
- a pinch of zest grated from lemon or orange
- 2 eggs (separated into yolks and whites)
- about 4 - 5 full tablespoons flour
- butter for frying or vegetable oil (I fried in clarified butter)
Preparation
- Mix the roasted apples with cinnamon, raisins (soaked in hot water beforehand) and vanilla sugar.
- Into a larger bowl, put the cheese (ground or mashed with a fork), add sugar, zest from lemon or orange (if using), yolks, mix.
- Add the prepared apples with raisins, sifted flour and foam beaten from egg whites. Gently mix. The mass should be thick, if necessary add more flour (you can check by frying one pancake to see if it flips well).
- Fry the pancakes in a heated pan, in butter, over medium heat, flipping once for about half a minute on each side.
Tips
* you can use ready-made puree or make it yourself: peel 3 apples, cut into quarters and remove the seed cavities. Dice, throw onto the pan with 1 tablespoon of butter, add about 4 tablespoons of sugar (to taste) and fry from time to time, stirring, until soft but still in pieces. Remove from heat and measure out 250 g and use that amount for the pancakes.
