Yogurt pancakes with strawberries
Ingredients
- 250 g Greek or plain yogurt
- 2 large eggs
- 2 tablespoons vegetable oil or melted butter
- 2 - 3 tablespoons sugar
- 1 and 1/3 cups wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- a small pinch of salt
- a few strawberries
Preparation
- In a bowl, mix or blend the yogurt with eggs and 2 tablespoons of oil, add sugar, flour sifted with baking powder, baking soda and salt. Mix or blend until the ingredients combine into a smooth and uniform mass.
- Heat a pan (e.g. a crepe pan or other non-stick) and spoon in 1 full tablespoon of batter per pancake, keeping spaces between them (the pancakes will rise during frying, so you can fry 4 at a time). Fry the pancakes over not too high heat until they rise and are nicely browned (about 2.5 minutes).
- When the pancakes rise (roughly in the second half of frying), insert 2 thicker slices of strawberry in each pancake.
- Flip the pancakes to the other side and fry until browned, for about 2.5 minutes or a little less. Before frying the next batch of pancakes, it's good to wipe the pan with a paper towel or sponge.
