Fluffy sweet omelet

Ingredients

  • 2 eggs
  • small pinch of salt
  • 2 tablespoons wheat flour
  • small piece of butter

Caramelized bananas

  • 4 tablespoons white sugar
  • juice from 1/4 lime
  • juice from 1/2 orange
  • 2 tablespoons orange liqueur
  • 1 banana sliced

Preparation

  1. Separate whites from yolks. Sift flour into a small bowl. Beat whites with a pinch of salt into stiff peaks at high mixer speed, then reduce speed to medium and gradually add mixed yolks, constantly beating (for approximately half a minute). Reduce speed to minimum and gradually (but briefly, only for approximately 10 seconds) add sifted flour.
  2. Immediately start heating skillet (with non-stick coating) 18-20 cm in diameter over medium heat for approximately half a minute. Thread a piece of butter on a fork and quickly grease the bottom and sides of the skillet. Remove remaining butter, skillet should be only lightly oiled. Spread beaten mixture, reduce heat to medium-low and fry omelet (uncovered) for approximately 3-4 minutes, until omelet starts quietly "sizzling".
  3. Then flip omelet to the other side (technique optional, from tossing to transferring with two spatulas and help from another person, you can also slide omelet onto a plate, cover with an inverted skillet and flip again). Fry on the other side for approximately 2 minutes. Transfer to a plate, sprinkle with powdered sugar and serve with favorite toppings (see below).
  4. Heat a small saucepan, add sugar, drizzle with lime juice, mix and heat without stirring for approximately one minute over medium heat. Sugar should dissolve, create thick and bubbling syrup. When syrup starts to brown (after approximately one minute of cooking) pour in orange juice and stirring bring to a boil, add banana and heat a bit longer over lower heat. Finally pour in liqueur, mix and remove from heat.

Tips

For a larger skillet you can use 3 eggs and 3 tablespoons flour.
A well-made omelet should be firm after frying, should not wrinkle and soften.
