Herring salad with red cabbage and dried plums
Ingredients
4 servings:
- 220 g (3 pieces) herring fillets in oil à la matjas, cut into 1 cm pieces
- 1 salad bowl very finely shredded red cabbage (preferably with a mandoline or vegetable grater)
- 1 apple, grated on a grater
- 1/2 small red onion, grated on a grater
- handful of dried plums, chopped
- 1 tablespoon rice or wine vinegar
- 2 teaspoons honey or brown sugar
- sea salt and freshly ground black pepper
- 1 tablespoon olive oil
- 3 tablespoons mayonnaise

Tips
The cabbage is best shredded very finely (finer than in the photo). If we want it to be soft rather than crunchy, we can blanch it first: shred, place in a pot, pour boiling water, season with salt and a tablespoon of sugar, bring to a boil. Cook for about 2 - 3 minutes. At the end add 1-2 tablespoons of vinegar to restore the initial color of the cabbage. Drain and cool, then proceed as above, i.e., combine with the rest of the salad ingredients.
