Unroll the puff pastry sheet and cut it into 4 pieces with a knife. Spread with cranberries and place pieces of cheese here and there.
Roll each piece into a log (not too tightly), along the longer edge. Cut the rolls lengthwise with a knife into 2 pieces. Roll each piece into a spiral - a snail - and place on a baking sheet lined with parchment paper with the cut side up. Alternatively, you can make one large roll and cut it into slices, like herbed spinach and sun-dried tomato spirals.
Using a pastry brush, brush the spirals with beaten egg. You can also sprinkle with chopped nuts.
Place in the preheated oven and bake for about 30-35 minutes until golden.
After baking, sprinkle with fresh rosemary leaves.
