Salad with Goat Cheese, Pear and Walnuts
Ingredients
- salad mix (1 package)
- 2 ripe, soft pears
- 2 tablespoons lemon juice
- 150 g fresh goat log cheese (goat's curd)
- 50 g walnuts
- 1 heaped tablespoon honey
- 2 tablespoons olive oil or rice oil
- salt and pepper
- to serve: e.g. baguette with butter
Preparation
- Divide the salad mix between 2 plates (check the package beforehand to see if it was washed and ready to eat).
- Peel the pear, cut into quarters, cut out the core, then slice the quarters about 1/2 cm thick. Place in a deep plate and drizzle with lemon juice.
- Take the pear out of the juice and add it to the salad. To the remaining lemon juice in the plate add honey, olive oil, salt and pepper. Whisk vigorously with a whisk, set aside.
- Add pieces of goat cheese and halved walnuts to the salad. Drizzle with the sauce from the plate and serve, for example, with buttered baguette.
Tips
The walnuts can be lightly toasted in a dry pan.
