Fava Bean Salad with Radish and Parsley
Ingredients
- 400 g fava beans (weight after cooking and peeling)
- 2 tablespoons lemon juice
- 1 bunch of radishes
- 1 small young onion
- bunch of parsley
- bunch of scallions
- 4 tablespoons extra virgin olive oil
Sauce
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- a few tablespoons water
- salt, pepper
- 1 teaspoon olive oil
- 1/2 teaspoon maple syrup (optional)
Preparation
- Drop the fava beans into salted boiling water and cook until tender (about 10 - 30 minutes, depending on whether they're young or mature). Drain, peel the skins off and measure out the amount needed.
- Place the peeled fava beans in a salad bowl and drizzle with lemon juice, mix.
- Add thinly sliced radishes, onion cut into thin strips, chopped parsley and scallion.
- Drizzle with olive oil, season with salt and pepper and mix.
- Prepare the sauce: place the tahini in a bowl, season with salt and pepper, add olive oil, lemon juice and syrup if using. Whisk with a spoon or blend, gradually adding water until you get a smooth, pourable sauce. Drizzle over the salad.

The salad can be served, for example, over red lentil pasta (photo below).
